the Every Day, Wholegrain Mustard


An all time favourite among many of us is the humble mashed potato, soft fluffy texture, wholesome earthy flavours balanced with the decedent buttery richness of milk. Every cook has their own way of preparing mash, from how best to cook the potatoes, what kind of dairy to add and countless other variations.


Colcannon is no different, this Irish wonder has no more a recipe than any other variation of mash. Bourne from folk lore, colcannon is a blissful union between fluffy floury potatoes, hearty rich greens and a whole lot of butter. Simple combinations complemented by one an other.


This recipe is a one pot wonder and my personal favourite!


4 floury potatoes, whole & skin on!

Boil in plenty of salted water until tender.


Drain and leave to steam in a colander until cool enough to hold.


Shred as much Savoy cabbage as you like. Gently fry with butter in the potato pot until just tender but still a bright green.


Peel the potatoes and mash into the cabbage.


Add a generous dollop of Mustard & More 'Every Day' wholegrain mustard.

Return to the heat and add a dash of whole milk to the desired consistency.

Season with salt and chopped parsley.


'Bangers n Mash' is a family favourite and with colcannon and onion gravy there will be clean plates and big smiles all round.
