New Potato Wedges

Pepper Pot, Grind & Rub

So its mid May and the New Potato season I the UK is just about getting going. Jersey Royals have been with us for a few weeks and the Cornish new's are underway. Soon there will be the Anya's and the Pink Fir Apples to name but a few. Chips, roasties and jackets are wonderful but for this time of year I really love a skin on roast new potato simply cut into quarters lengthways!
The earthy nutty flavour, so delicately provided by the thin skin, gives way to the gentle flesh and rich flavour of a new potato. Mustard & More Pepper Pot, Grind & Rub, marries this perfectly with the earthy bite from the black and white peppercorns, followed by grapefruit aromas coming from the green peppercorns and brown mustard seeds finished off elegantly with dried oregano. Delicious!
Preheat your oven to 200°C with a baking tray in the top
Simply wash and quarter your favourite new potatoes
Briefly par-boil in salted water
Drain and allow to steam off for a few minutes
Toss in a little sunflower oil with a pinch of rock salt
... and a good pinch (or more if you prefer) of Pepper Pot.
Spread out on the hot baking tray in the oven
Roast until tender
My families absolute favourite is to dip these little beauties in some roast garlic and parsley alioli.
