Packing in flavour is at the heart of all cooking, after all eating is a pleasure! Every culture and country around the world have traditions handed down through the generations to give a base from which to build flavour, Sofrito, Holy Trinity and Mirepoix to name but a few. Many of these traditions use vegetables on their own or combined with spices, either way they provide a stock of flavour.
Whole spices are used by many cuisines (predominantly the Indian subcontinent) to achieve the same, a great base flavour from which to build. While Spices are loaded with flavour and aromas getting these out is not as straightforward as simply grinding or throwing them into the pot. This is where tempering such as a Tadka or Tarka comes in.

Tempering is a method of heating the spices to release the flavour, aromas and oils within. Oil or ghee is used to gently fry the spices in which also giving a nutty element to the flavour. Including some fresh aromatics such as chillies, garlic or ginger is also commonplace.
Tempering spices is often done at the beginning of cooking but drizzling a Tarka over the finished Dahl to serve or stirring a Tadka into a Samba is just as delightful!
