Spicy Flatbreads

Pita, Naan, Chepati, Roti, Bannock, Tunbrödd... there are so many delightful, quick and straightforward flatbreads to be enjoyed the world over, but perhaps the first that springs to my mind is the Turkish Lavash or Indian Naan. Soft Pillowy centre and charred bubbled ultra thin crust from the intense fast bake. One of the many reasons I like these in particular is the flexibility in both flavours and baking. Add garlic, dried fruit, herbs, onions, seeds what ever takes your fancy really. Then there's the bakings, a hot oven with preheated tray, pizza stone, grill BBQ stone, frypan, skillet, what ever you have to had really to give that intense heat on a flat surface. It's just an excuse to play really.
Here is a basic recipe for a leavened flatbread similar to a Naan to get you going...

400g white bread flour
225 - 285g water
50g oil (mustard, sunflower, nut)
15g fresh yeast
5g salt
1tbs Turkish Bazaar spice blend
85g sultanas
Simply mix all of the ingredients into a firm but soft dough.
Work the dough until elastic and smooth.
Proof until doubled in size.
Pre-heat your oven with a baking tray or pizza stone to 220°c.
Divide the dough into 6 and roll out to 3-5mm which.
Bake in batches on the stone / tray until risen, approximately 5 minutes each side.
This is a great bread to have with Mezze, Dahl, BBQ or any meal where you really want something to mop up or dip in.
