the Pulse, Spice Blend


Curry night is perhaps one of my favourite family meals, fragrant aromatic and bursting with flavour and textures. Perhaps more than the enjoyment of eating is the fun to be had preparing 'curry night'. We haven't had a conventional take away from am 'Indian Restaurant' for more years than I can remember, but cuisine from the Indian subcontinent is always on the weekly menu planning. Alongside a main dish there are the flatbreads, chutneys, fresh vegetables and of course Dahl. When I first started dabbling in Indian cuisine I was fairly certain that our boys wouldn't take to it that quickly, but how wrong could I have been and to my surprise Dahl was their favourite part of the meal!


This recipe has been refined over the years to be our favourite go-to Dahl recipe. Fragrant and full of flavour without being the star of the meal, this recipe holds its own against the most spiced dishes. Perfect as an accompaniment and refined enough to be the main event.


300g Chana Dahl

Soak in water for at least 3 hours.


1tsp the Pulse Spice Blend

1tbs oil or ghee

1 onion, diced

1cm fresh ginger, grated

4 cloves garlic, crushed

1 large tomato, chopped

Salt


Temper the spices in the oil or ghee.

Drain and add the Dahl.

Add enough water to cover + 50%.

Add the remaining ingredients and bring to the simmer.

Simmer until tender which will take approximately an hour and a half.

Add more water as necessary to give the desired consistency.


If you prefer a chunky Dahl then leave this to simply simmer, but if you prefer a smoother consistency then mash the split peas about an hour into the cooking and adjust the water as necessary. Sloppy or thick is entirely up to you!


One of our friends introduced us to the just Dahl dinner and I would thoroughly recommend it. Simply cook your Dahl but leave it a little sloppy, then at the end add some chopped vegetables and herbs to finish. A mixed vegetable Dahl, delightful and a very easy one pot meal. Serve with some flatbreads and your favourite chutney!
